DAYS: 35 (greens) 60 (full maturity)

With crisp, ruby red stems and crumpled, red-veined leaves, this easy-to-grow variety is a beautiful addition to salads. The flavor is similar to spinach, but unlike spinach, Swiss chard thrives in warm weather. Try it lightly steamed, or Mediterranean-style - sauteed in olive oil with a splash of vinegar at the end. Plant seeds in early spring as soon as soil can be worked. Enrich soil before planting. Be sure to thin young plants to make room for fast-growing leaves. Begin harvesting when outer leaves are six to eight inches tall. Cut off individual leaves near the base of the plant. New leaves will grow back for a continuous harvest until fall frost. Fertilize after a heavy harvest to encourage new growth. 35 days to harvest for salad greens, 60 days for mature leaves.
